Watermelon Arugula Salad

Sweet, bold and fresh! Serve this amazing flavor combination at your next summer celebration.


  • 1 (5 oz.) package of Olivia's Organics Baby Arugula
  • 2 cups cubed watermelon
  • 2 tablespoons fresh mint – rough chopped or torn
  • 1 cup Boursin cheese (can substitute with Feta)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Aged balsamic


  • Gently toss together the arugula, watermelon, mint and cheese and place on a serving platter or shallow bowl. Season with salt and pepper and drizzle with olive oil and balsamic vinegar. Serve salad immediately.
