- 1 (5 oz.) package of Olivia's Organics Baby Arugula
- 2 cups cubed watermelon
- 2 tablespoons fresh mint – rough chopped or torn
- 1 cup Boursin cheese (can substitute with Feta)
- Salt and pepper to taste
- Extra virgin olive oil
- Aged balsamic
- Gently toss together the arugula, watermelon, mint and cheese and place on a serving platter or shallow bowl. Season with salt and pepper and drizzle with olive oil and balsamic vinegar. Serve salad immediately.
