Quinoa & Spinach Fruit Salad

Fruit salad that packs a punch!

Yield: 4 Servings


Place quinoa in 2 cups boiling water. Reduce to a simmer and cook for approximately 15 minutes. Fluff with a fork and set aside to cool (or follow cooking directions on package).

Add dressing ingredients in a bowl or jar and whisk or shake until well combined.

Mix all ingredients together in a large bowl or platter.

Toss with salad dressing to taste.
