Simple Green Muffins

These sweet muffins provide a great way to get your greens in ... without telling the kiddos!

Yield: 9-12 Standard Muffins


Preheat the oven to 375 F and prepare a muffin tin with liner or non-stick spray.

Combine spinach, yogurt, oil and sugar in a high-speed blender and blend, stirring gently and pulsing, until you reach a smooth purée.

In a separate large bowl, whisk together flour, baking soda, baking powder, spices and salt. Pour purée into dry ingredients and mix until just combined with a rubber spatula.

Scoop batter into muffin cups until about ¾ way filled. Bake until domed and set, about 17-20 minutes.
