Stop us if you’ve heard this one before: You’re in the shower or sipping your morning coffee and planning your day. You’re sure you’ll have time to cook that more involved recipe you came across over the weekend.
Then, real-life creeps in. You find you have a lot less time (and energy) to cook when it’s time to get dinner on the table.
Don’t fret – Olivia’s has you covered. Our recipe archive has those ambitious, involved dishes for sure (Ribollita soup, anyone?). But we also have a ton of recipes that come together quickly without sacrificing healthy ingredients or great flavor.
Those are the recipes we’re focused on today. They all take less than a half hour to prepare. Check ‘em out!
Turkey & Butternut Squash Skillet:
This skillet couldn’t be easier to cook and combines big spice flavors with lean turkey and succulent spinach. Pro Tip: Top with a fried egg for some bonus protein!
Grilled Steak Salad:
Steak is the star of this salad, but don’t skimp on the other toppings (or that balsamic vinaigrette). And if the grill isn’t an option during the winter months, a cast iron over high heat will work just as well.
Kale Grilled Cheese:
This may be the ultimate quick, kid-friendly dinner. Crispy bread, gooey cheese and a pop of color (and healthy stuff) from the kale. If you have time to whip up some tomato soup to go with the sandwiches, we doubt anyone will complain!
There you have it! Three healthy, delicious recipes that come together quickly and keep your weeknight evenings on track.
Your turn! What’s your go-to weeknight recipe? What kind of cheese do you love in a grilled cheese? What’s your favorite day to try more complicated recipes and dishes? Email us at teamolivias@oliviasorganics.org or tag us on Instagram — that’s @Olivias_Organics.
