Zucchini Noodles with Pesto

Zucchini noodles replace pasta for double the dose of veggies in this dish.

Yield: 4 Servings


In a blender or food processor, make the pesto: add the olive oil, basil, walnuts, 2 garlic cloves, salt and pepper and blend. Remove and stir in the cheese. Set aside.

Spiralize zucchini to create zoodles. Set aside.

In a very large sauté pan, heat the olive oil and sauté the onion and tomato for 4 minutes, stir in the garlic and cook another minute. Add in the zucchini noodles, spinach and ½ cup pesto (more if desired). Combine all the ingredients and season with salt and pepper. Sauté for 5 more minutes.
