Spinach & Mixed Berry Salad

Ingredients
- 3 cups Olivia’s Organics Baby Spinach
- 1/2 cup raspberries
- 1/2 cup blackberries
- 1/2 cup blueberries
- 1/2 cup sliced almonds
- Salt and pepper to taste
- 1/3 cup white sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 2 teaspoons poppy seeds
- 1/2 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 small onion grated
Instructions
- Add dressing ingredients to a jar with a tight lid and shake together until well incorporated.
- Arrange the baby spinach, berries, and almonds on 2 salad plates. Season with salt and pepper to taste and drizzle with dressing.
- Store the extra dressing in the fridge for up to 2 weeks.
