Spaghetti Squash with Greens & Turkey Sausage

Pass on the pasta without missing great texture or flavor!

Yield: 4 Servings


Preheat oven to 400 degrees F.

Cut spaghetti squash in half lengthwise. Scoop out seeds and place squash halves cut side down in a baking pan. Add a little water to the pan to cover the bottom. Bake for 45 minutes. Let cool enough to handle. Using a fork, scrape the inside of the squash to remove the strands of squash (spaghetti) to a platter.

While the squash bakes, heat 2 tablespoons olive oil in a very large sauté pan. Add the onion and cook for 5 minutes. Add the turkey sausage meat and using the back of the spoon or spatula, break up the meat while it cooks. Cook until turkey is browned. Add the garlic and the greens to the pan and continue cooking until the turkey is cooked through, the greens are wilted, and most of the liquid is gone. Season with salt and pepper to taste.

Top the warm spaghetti squash with the greens and sausage and sprinkle with Parmesan cheese.
