Shamrock Pancakes

Start the day off green!

Yield: 4-6 Servings


In a blender, combine spinach, buttermilk, egg, and melted butter (once butter has cooled a bit).

In a separate bowl, whisk together the remaining (dry) ingredients.

Gently mix together the wet and dry ingredients making certain not to over mix.

Heat a non-stick pan or griddle and melt butter. Cook the pancakes in the hot, buttered pan, turning over when bubbles begin to come to the top. Serve with real maple syrup and fresh fruit.
