Sausage, Potato & Butternut Squash Sheet Pan Dinner

Sheet pan recipes make for an easy, delish, and fun family dinner!

Yield: 6 Servings


Add potatoes to a pan of cold water, bring to a boil, salt the water and then simmer for 15 minutes. Drain and set aside to cool.

Preheat oven to 400° F.

Slice sausage into 2 inch pieces. Add the sausage, onion, broccoli, tomatoes and butternut squash to the sheet pan and toss with 2 tablespoons of the olive oil. Spread over 3 quarters of the pan. Add the par cooked potatoes to the remaining quarter of the pan. Using a flat bottom glass, smash each potato slightly, keeping them whole. Drizzle 1 tablespoon of olive oil over the potatoes. Season everything with salt, pepper, garlic powder, and add the onion powder to the potatoes only.

Roast for 30 minutes, remove from oven and toss everything except for the potatoes. Return to oven for an additional 10 minutes.
