Just 20 minutes of prep to whip up fresh and healthy salmon burgers! ... double the yogurt, lemon, dill dressing. It's that good!
In a large pan of boiling water with salt added, add spinach and cook for 2 to 3 minutes. Remove, drain and let cool. Once cooled, place in a dish towel and squeeze out the liquid. Set aside.
With a sharp knife, mince the salmon fillet.
In a large bowl, mix the minced salmon together with the cooled spinach, panko, egg, garlic, scallions, ginger, soy sauce, salt and pepper.
Form mixture into 4 burgers. Place burgers in refrigerator for about 1 hour.
Heat a large sauté pan with 2 tablespoons olive oil on medium high. Add the salmon burgers and cook for 2 to 3 minutes per side, until browned.
In a separate bowl, mix together Greek yogurt, lemon juice and dill. Serve on top of burger.
