Grilled Stuffed Portobello Mushrooms

Mushrooms and onion and garlic ... OH MY!!!

Yield: 4 Stuffed Mushrooms


Preheat grill to medium high.

On the stove, or at the grill, heat 2 tablespoons of extra virgin olive oil in a sauté pan. Add the onion and peppers and sauté for several minutes. Add in the garlic and spinach, and season with salt and pepper. Cook until the spinach is wilted. Drain off any remaining liquid.

Brush both sides of the mushrooms with olive oil and grill them for 5 minutes. Turn them over and grill for another 3 to 4 minutes. Remove from grill, fill with vegetables, and top with shredded cheese.

Place the stuffed mushrooms back on the grill for another 4 minutes until cheese is melted.
