This pizza sure packs a punch!
Preheat outdoor grill on high. If using a pizza stone, place it on the grill while it preheats.
Roll out the dough on a lightly floured surface. Drizzle the dough with olive oil and place on the heated pizza stone for a few minutes until it begins to brown. *If not using a pizza stone, place the dough on a sheet pan and then on the grill, or lightly oil the grates and place directly on the grill. Once the dough has lightly browned, layer on the tomatoes, prosciutto, and dollops of ricotta cheese. Season with salt and pepper and continue cooking for approximately 5 minutes or until crust is cooked and lightly browned.
In a separate bowl, toss the arugula with a little extra virgin olive oil, salt and pepper. Place arugula on top of the pizza after removing it from the grill.
