Egg Salad with Arugula
- 6 large hard boiled eggs – chopped
- 3 scallions – white and light green parts – sliced
- 2 handfuls Olivia’s Organics Baby Arugula – chopped
- 1/2 cup light mayo
- Salt and pepper to taste
- 4 Brioche rolls
- Combine the first 5 ingredients together in a bowl and mix well.
- IFill rolls and enjoy!
