Quick and comforting week night family meal!
Heat oil in a large sauté pan on medium. Season the chicken with salt and pepper and cook on each side until lightly browned. Remove chicken and set aside.
Add garlic and peppers to the same pan, and cook for 1 minute while stirring. Stir in the chicken broth and raise heat to medium high. Stir in the heavy cream, onion powder, Italian seasoning and Parmesan cheese until slightly thickened.
Lower the heat, add in the spinach and season with salt and pepper as needed. Add chicken back in. Heat until spinach is wilted and chicken is warmed.
Serve as is or over pasta or rice.
