Arugula and Celery Salad

Ingredients
- 1 (5oz.) package Olivia’s Organics Baby Arugula
- 1 apple – peeled and sliced
- 2 stalks celery – sliced thin
- 1/2 cup chopped walnuts
- 1/2 cup dried cranberries
- 1/2 cup blue cheese – crumbled
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons pure maple syrup
- 1/4 teaspoon salt
- 1/8 ground pepper
Instructions
- Arrange all of the salad ingredients in a salad bowl or serving platter.
- In a separate bowl, whisk the dressing ingredients (or add to a jar and shake) until emulsified.
- Drizzle the dressing over the salad and serve.
