Roasted, mashed, sautéed … savory or sweet … casseroles, soups, pasta dishes and nachos too! This nutty, golden, slightly sweet wonder is chock full of vitamins and minerals. It can be prepared silky and smooth or hearty and chunky. Butternut squash’s rich and comforting texture makes it a great substitute for meat in many dishes. And it’s delicious! Did we say that already?!
