Spring is clearly in the air! You can feel it, hear it, and smell it! The birds are chirping, flowers are blooming, and things just look and feel more alive. Time to go outside and soak up nature. Weekend hikes, picnics in the park, even dinners out on the deck!
And what goes better with the great outdoors than enjoying it with good friends and good food? We can’t think of anything either. So, this week we’re sharing some of our favorite springtime recipes that are easy to put together and travel well. Whether you’re just going from your kitchen to your patio or heading to a springtime BBQ with friends and family, these dishes have you covered.
Lentil & Heirloom Tomato Bowl:
If there’s such a thing as the perfect meal to enjoy outdoors, this just might be it! The ingredients won’t weigh you down yet are still filling and satisfying. This delicious combo of protein and veggies packs up conveniently in individual bowls.
Spinach & Mixed Berry Salad with Poppy Seed Dressing:
Simple has never been so sumptuous. Grab whatever berries look best in the produce aisle and just add almonds and Olivia’s baby spinach. Pro tip: This salad is easy to double or triple in order to feed a crowd. And the poppy seed dressing is just WOW!
Kale Hummus: This upgrade on the spreadable classic looks as great as it tastes. Kale adds a bright green hue (and a ton of vitamins and minerals) to traditional hummus ingredients. Make a big enough batch to share!
