Lots of us had our first real bout of summer heat last week, and it was HOT. We’re talking crank the AC and turn on the fans hot. Shorts, tank tops and flip flops hot. Be in the pool by 10 a.m. hot.
On days like that, the last thing we want to do is fire up the oven, or even the grill. But we still want to cook and enjoy delicious food. So this week, we’re sharing some of our favorite no-cook recipes from the Olivia’s Organics recipe archive.

Peach Breakfast Salad with Arugula & Corn:
The flavor combinations here are off the charts – tangy yogurt, sweet peaches, peppery arugula, and more add up to a great way to start your day.
Pro Tip: Opt for flaky salt that will add further pops of flavor.
Chicken & Greens Protein Salad:
Rotisserie chicken for the win! Store-bought chickens are one of the great secrets to no-cook meals, and this recipe is about as customizable as they come. Sub in whatever veggies looked best at the farmer’s market and tweak the dressing to your heart’s content!
Tuna Salad on Spinach:
We’re throwing it back to a no-cook classic … tuna salad! Our take calls for just the basics and gets a healthy and delicious boost by being served over a bed of baby spinach.
