Going vegan and adding more plants into daily meals is easier than ever. Don’t get us wrong, eliminating meat and dairy from your diet still takes time and discipline. But as more and more plant-based alternatives for almost every food item become readily available, meal planning, adapting recipes, and grocery shopping are becoming easier. Vegan restaurants are popping up everywhere and many restaurants have vegan-friendly and plant focused menu offerings.
To help you along your plant centric journey, we’re highlighting some of our favorite vegan (and vegan adaptable) dishes from our recipe archive. Check ‘em out!
Savory Vegan Breakfast Bites:
Breakfast hasn’t always been the easiest meal of the day for plant-based devotees. This recipe uses chickpea flour and nutritional yeast (two vegan super ingredients) in place of eggs. Add a big bunch of Olivia’s spinach, and you’re well on your way to starting the day off right!
Smoky Spinach Tacos:
You won’t miss the meat in these flavor-packed tacos, which can easily be made vegan by omitting or substituting the cheese. Don’t skip the finishing touches – the radish, fresh cilantro, and lime really do take taco night to the next level.
Stuffed Peppers with Spinach:
Lentils are another great addition to a plant forward diet, and this recipe calls for either the brown or French variety. Swap the feta cheese with vegan feta crumbles for a delicious vegan meal.
Vegan Carrot Cake Kale Cookies:
Some desserts tend to be heavy on eggs, butter and cream. You won’t miss the eggs or dairy in this cookie version of the iconic carrot cake. There’s no better way to convince kids (and grownups) to eat their fruits and veggies than with a batch of these!
