Spring has sprung! One of the things we love most about spring (besides the warmer temperatures and longer days), is the return of fresh fruits and veggies. There’s nothing better than finding a particularly fresh, in-season vegetable at the market and basing a whole meal plan around that superstar veggie.
This week, we’re bringing you a batch of recipes that showcase just how versatile vegetables can be. These recipes are healthy, filling, and VEGAN! That’s right – they’re all totally plant-based, and totally delicious. Check ‘em out!
Cowboy Caviar: Here’s the perfect side to bring to the first BBQ of the year. Canned beans and fresh veggies combine to create a host of complementary flavors that go great on their own or scooped up with some tortilla chips.
Lentils & Heirloom Tomato Bowl: This recipe is proof that meatless meals can be filling. Just don’t skip the Lemon Dijon Vinaigrette – a perfect topper for this delicious bowl.
Kale Salad with Pears & Pecans: Nuts are one of nature’s true super foods. They’re healthy, filling and satisfying. This recipe works as a perfect light dinner on its own or as a side (to keep it vegan, substitute a different sweetener in the dressing).
Coconut Lime Popsicles: These pops rely on one of the greatest plant-based hacks around – coconut. A quick pulse in the blender and a few hours in the freezer, and you’re well on your way to a delicious and refreshing springtime treat.
