Breakfast Stuffed Sweet Potatoes:
Here’s a hearty breakfast that will give you plenty of energy to start your day off right. Prep a couple of sweet potatoes in advance to save time, and don’t forget the scallions!

Roasted Chickpea Salad – With Heat!:
Chickpeas don’t have to be boring or bland. If you’re looking to eat less meat this year, this salad will undoubtedly become a go-to lunch option. Both the salad and the creamy jalapeño dressing have some spice. The heat isn’t absolutely necessary, but it sure elevates the taste!

Turkey & Butternut Squash Skillet:
This could be another delicious breakfast option, but we like it as a quick and easy dinner. The fresh sage really adds an extra oomph in the flavor department, but dried sage will also work in a pinch.

Spring Smoothie:
Smoothies are the unsung heroes of healthy eating. They’re easy, filling, and can be customized to your heart’s content. This spring smoothie has just a few simple ingredients and can be made with frozen strawberries and bananas.
