Easy Dinner Recipes for a Hectic Halloween Night

Halloween is right around the corner – just over a week away!

There’s a lot to prepare in the week ahead. Costumes need finishing touches, candy needs to be purchased, Trick-or-Treating routes need to be finalized. The last thing anybody wants to worry about is a complicated dinner.

Fear not! We’re back again this year with recipes that can be prepped in advance and can feed a crew of hungry ghosts, goblins, superheroes, and more. Best of all, the recipes are all healthy enough to offset some of the candy and sweets kids will collect.

Spinach & Ricotta Frittata:
Egg bakes get a lot of love at brunch, but they’re a great way to serve a crowd at any time of day. This simple version relies on spinach and ricotta, plus a big handful of fresh herbs, and can be enjoyed warm or at room temperature.

Butternut Squash & Sausage Pasta:
No one goes hungry with a big pot of pasta warming on the stove. This variation calls for ground pork sausage. But chicken, turkey, or plant-based sausage would work just as well!

Spinach Chili:
Nothing says autumn like chili. This long list of ingredients comes together so easily and so deliciously. Plus, it’s endlessly customizable – include whatever secret ingredients your family uses for chili. Just don’t skip the spinach, which gives this chili its iconic green color!
