Chef Linda's spinach chili is packed full of nutritious and delicious ingredients!
In a large pot, heat the olive oil. Add onion, green pepper and garlic. Sauté for approximately 5 minutes.
Move the veggies to the side of the pot and add the ground turkey. Diced turkey meat will also work. Continue to cook over medium heat until turkey is browned.
Add all seasonings to the pot and mix everything to combine.
Stir in the crushed tomatoes, both beans and corn.
Bring to a boil and reduce to simmer for approximately 15 minutes. Add the spinach and cook another 5 minutes until wilted.
Ladle into bowls and top with cheese, scallions, sour cream and cilantro.
