When you think about it, celery really is the perfect ingredient. Its crispy brightness offers a fresh companion to spicy Buffalo wings and Bloody Mary’s. In a mirepoix, it’s a foundation of French cuisine. In ants on a log, it’s a great way to convince kids to eat more healthy veggies.

There’s really nothing celery can’t do. Yet too often, it ends up stuck in the shadow of its more recognized recipe counterparts.

No more! This week, we’re spotlighting four dishes that celebrate our favorite healthy, colorful, and delicious stalk.

Baked Celery with Pin Nuts: 
No one will believe that celery is the star of this elegant and complex side dish. Blanching and baking celery delivers a texture transformation that’s enhanced by breadcrumbs, pine nuts and a delicious Béchamel sauce.

Humble ingredients combine to form a sophisticated soup that works as a starter or main course. The truffle oil and croutons really make this dish stand out.

Celery & Nut Crostini: 
Move over, bruschetta! This crostini delivers a delicious appetizer that’s a little bit sweet, a little bit savory, and a lot of healthy!

Celery & Gorgonzola Sticks: 
Ants on a log for grown-ups! This “recipe” could not be easier, but still delivers a fancy and fantastic appetizer that’s perfect for your next gathering or potluck.
