Spinach & Mixed Berry Salad

Delightful berries pair perfectly with Chef Linda’s poppy seed dressing.

Yield: 2 Servings

Instructions

Add dressing ingredients to a jar with a tight lid and shake together until well incorporated.

Arrange the baby spinach, berries, and almonds on 2 salad plates. Season with salt and pepper to taste and drizzle with dressing.

Store the extra dressing in the fridge for up to 2 weeks.

  • 3 cups Olivia’s Organics Baby Spinach
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup sliced almonds
  • Salt and pepper to taste
  • 1/3 cup white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 teaspoons poppy seeds
  • 1/2 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 small onion grated
