- 1 package Olivia's Organics Organic Celery
- 1/2 cup pine nuts – toasted in a dry pan
- 1 cup frozen peas - cooked according to package directions and cooled
- 1/2 cup shaved Parmesan cheese
- Extra virgin olive oil
- 1 tablespoon freshly squeezed lemon
- Salt and pepper to taste
- Thinly slice celery on an angle. Toss together the celery, pine nuts and peas. Top with Parmesan cheese. Drizzle with olive oil and lemon. Season with salt and pepper.
