Yields: 6 to 8 servings
- 2 large tomatoes - diced
- 1 small onion – finely diced
- 2 cups Olivia’s Organics Baby Spinach - chopped small
- 2 tablespoons cilantro - chopped small
- 1 jalapeño - seeds removed and finely diced (adjust according to your heat preference)
- 1 lime - juiced
- 1 teaspoon salt
- 2 or 3 dashes of hot sauce
- Combine all ingredients in a large bowl and serve with tortilla chips.
Also great with tacos, nachos, on top of grilled fish or chicken.
