1 cup brown rice
1 3/4 cups water
1 tablespoon unsalted butter
3 tablespoons olive oil - divided
1 small onion - chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon sugar
1 (11oz) package of Olivia’s Organics Sauté Blend
1 pound large shrimp - peeled and deveined
Combine brown rice, water and 1 tablespoon unsalted butter in a large pot. Bring to a boil, cover and reduce to low. Cook for 40 minutes. When finished, remove from heat and fluff with fork. (or follow package directions)
In a large sauté pan, heat 2 tablespoons olive oil and add onion. Sauté for approximately 5 minutes. Add the cooking greens along with salt and pepper, combine and continue to cook for another 4-5 minutes. Remove from pan and stir into rice.
Season shrimp with salt and pepper and sugar. Using the same pan, add another tablespoon of olive oil and heat over medium high heat. Add half the shrimp in a single layer and cook for approximately 1-1 1/2 minutes. Remove pan from heat, turn shrimp over and let stand for 30 seconds. Repeat process with the rest of the shrimp. Add all the shrimp back in pan, cover and let stand another 1-2 minutes.
Serve the sautéed shrimp over the greens and brown rice.
