Roasted Butternut Squash with Thyme

Roasting butternut squash makes it even sweeter while the thyme adds a savory yet mild aromatic element. Cook time is approximately 45 minutes with little prep. Serves 4 as a side.

Ingredients

1 package of Olivia’s cubed butternut squash
1/4 cup olive oil
Salt and pepper to taste
2 tablespoons fresh thyme (or 1 tablespoon dried thyme)

Preparation

Preheat oven to 350 degrees.

In a casserole dish or baking sheet, add the butternut squash and toss with the olive oil, salt and pepper. Top with the thyme. Bake for 40 minutes, stirring the squash once after 20 minutes of cooking.
