- 1 (20oz) package of Olivia's Organic's Butternut Squash
- 2 tablespoons butter, or to taste
- salt and pepper to taste
- Prepare the squash by either boiling it in a medium pot of water until tender, then drain well, or, toss with olive oil and seasoning and roast on a sheet pan in a 375 degree F oven until tender, 35 to 45 minutes.
- Mash the cooked squash with a potato masher or for a smoother consistency, use a stick blender.
- Stir in butter and season with salt and pepper to taste.
