Mashed Butternut Squash

So delicious, naturally sweet and nutty - this side dish couldn't be any simpler.



  • Prepare the squash by either boiling it in a medium pot of water until tender, then drain well, or, toss with olive oil and seasoning and roast on a sheet pan in a 375 degree F oven until tender, 35 to 45 minutes.
  • Mash the cooked squash with a potato masher or for a smoother consistency, use a stick blender.
  • Stir in butter and season with salt and pepper to taste.
