Holiday Inspired Cobb Salad

Roasted turkey and butternut squash bring holiday flair and flavor to this classic salad.
Yield: 4 Main/8 Side Servings

Ingredients

  • 1 (5 oz.) package Olivia’s Organics Baby Spinach
  • 2 cups leftover turkey - shredded
  • 2 cups Olivia’s Organics Butternut Squash - cubed and roasted
  • 1 avocado - sliced
  • 1/2 cup red onion - thinly sliced
  • 4 hard boiled eggs - chopped
  • 4 slices turkey bacon - chopped
  • 1 cup pecans - chopped
  • 1 cup goat cheese
  • Salt and pepper to taste

    Apple Cider Vinaigrette
  • 1/4 cup apple cider vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon
  • 2 teaspoons honey
  • 1/3 cup extra virgin olive oil
  • 1 clove garlic - minced

Preparation

  • Lay the baby spinach on a large platter. Arrange the turkey, butternut squash, avocado, onion, eggs, bacon, pecans and goat cheese, in sections, on top of the spinach. Season with salt and pepper.
  • In a large bowl, whisk together the ingredients for the vinaigrette and serve on the side.
