- 1/2 tablespoon unsalted butter
- 1 handful of Olivia's Organics Baby Spinach (or baby kale)
- 3 egg whites - whisked
- 1 slice thin ham - chopped
- 2 tablespoons goat cheese (or your favorite cheese)
- Salt and pepper
- Add butter to a heated small sauté pan. When butter is melted, add the greens. Cook until wilted. Add the egg whites and ham while stirring. When the eggs begin to set, top with the cheese and blend together. Season with salt and pepper.
