Creamy Chicken & Spinach

Quick and comforting week night family meal! Yield: 4 servings


  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts - thin sliced
  • Salt and pepper - to taste
  • 2 garlic cloves - minced
  • 1 cup roasted red peppers - chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon onion powder
  • 1 tablespoon Italian seasoning
  • 1 cup freshly grated Parmesan cheese
  • 2 packed cups Olivia's Organics Baby Spinach
  • Salt and pepper - to taste


  • Heat oil in a large sauté pan on medium. Season the chicken with salt and pepper and cook on each side until lightly browned. Remove chicken and set aside.
  • To same pan, add garlic and peppers, and cook for 1 minute while stirring. Stir in the chicken broth and raise heat to medium high. Stir in the heavy cream, onion powder, Italian seasoning and Parmesan cheese until slightly thickened.
  • Lower the heat, add in the spinach, season with salt and pepper as needed and add chicken back in. Heat until spinach is wilted and chicken is warmed.
  • Serve as is or over pasta or rice.
