1/2 package Olivia’s Organics Butternut Squash - cubed into 1 inch pieces
3 tablespoons olive oil
Salt and pepper to taste
1 packed cup Olivia’s Organics Chopped Kale
1 pound prepared pizza dough
1/2 to 1 cup gorgonzola cheese - crumbled (according to taste)
Preheat oven to 450 degrees F.
Place cubed butternut squash on a sheet pan, drizzle with two tablespoons of olive oil and season with salt and pepper. Roast in oven for 20 minutes. Remove the pan, stir the squash and add the kale to the pan. Return to oven and cook together for another 10 minutes. Remove pan from oven and cool.
Roll out pizza dough. Brush crust with one tablespoon of olive oil. Arrange the butternut squash and kale on the dough, spread on the gorgonzola cheese, season with salt and pepper. Place in a 450 degree oven for 10-12 minutes or until the bottom of the crust is cooked.
