Braised Kale with Tomatoes and Garlic

Easy side-dish with our ready to cook chopped kale. Add a can of white cannellini beans and serve over rice for a great vegetarian entree.

2 tbs olive oil
1 to 2 cloves garlic – finely chopped
1 (14.5oz) can diced tomatoes
¼ cup of water
1 (9oz) bag of Olivia’s Organics Chopped Kale
Salt and pepper to taste


In a large sauté pan with a cover, heat olive oil over medium heat. Add garlic and cook for one minute, or until fragrant. Stir in diced tomatoes with their juices and add water. Season with salt and pepper to taste and stir to combine.

Add the bag of chopped kale and cover the pan for approximately two minutes until the tomatoes start to simmer and the kale starts to wilt. Stir the kale and tomatoes and simmer with the lid on for 15 minutes or until desired tenderness. Stir occasionally and add more water if the liquid starts to evaporate.
