Avocado Egg Salad

Creamy and healthy avocado makes egg salad egg-citing again!
Yield: 2 Sandwiches


  • 4 large hard-boiled eggs - chopped
  • 1 Olivia’s Organics celery stalk - diced
  • 1 avocado - fork mashed
  • Salt and pepper to taste
  • Olivia’s Organics Spring Mix
  • 4 slices whole wheat bread


  • In a bowl, mix together the chopped egg, celery and avocado. Season with salt and pepper.
  • Put egg salad on your favorite bread and top with Spring Mix.
