- 4 large hard-boiled eggs - chopped
- 1 Olivia’s Organics celery stalk - diced
- 1 avocado - fork mashed
- Salt and pepper to taste
- Olivia’s Organics Spring Mix
- 4 slices whole wheat bread
- In a bowl, mix together the chopped egg, celery and avocado. Season with salt and pepper.
- Put egg salad on your favorite bread and top with Spring Mix.
