Asian Salad

This dressing is amazing and worth the effort! Perfect for this beautiful and flavorful salad.

Ingredients

Salad

  • 1 (5oz) package of Olivia’s Organics Spring Mix
  • 2 large carrots - peeled and shredded
  • 1 red bell pepper - sliced thin into 3 inch pieces
  • 2 cups red cabbage - shredded
  • 1/2 cup sliced almonds

Dressing:

  • 2 tablespoons peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 2 teaspoons soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon Sriracha
  • 1/2 teaspoon salt
  • 1 teaspoon fresh ginger - peeled and grated
  • 1 garlic clove - minced
  • 1/2 fresh lime - juiced

Preparation

  • Combine salad ingredients together in a large bowl.
  • Blend all dressing ingredients in a blender or food processor until smooth.
  • Add dressing to salad and serve.
