Grilled Peach & Arugula Salad

The grilled peaches add a super yummy sweetness to this fresh salad!

Yield: 4 Servings


Cut the grilled peaches into slices. Arrange the arugula on a platter and top with the peaches, pistachios, feta and mint.

Add all dressing ingredients into a covered jar and shake well. Drizzle some of the dressing over the salad and serve. Remaining dressing will keep for a week in the fridge.
