- 2 generous handfuls Olivia's Organics Arugula
- 4 slices prosciutto or any dried ham
- 1/4 cup Shaved Parmesan
- Salt and pepper - to taste
- 1 tablespoon freshly squeezed lemon
- Drizzle of extra virgin olive oil
- Arrange the first 3 ingredients on two serving plates, and season with salt and pepper. Top with a squeeze of lemon and a drizzle of olive oil.
