Arugula Prosciuto Salad

Date night? Try this sophisticated yet simple starter for two.


  • 2 generous handfuls Olivia's Organics Arugula
  • 4 slices prosciutto or any dried ham
  • 1/4 cup Shaved Parmesan
  • Salt and pepper - to taste
  • 1 tablespoon freshly squeezed lemon
  • Drizzle of extra virgin olive oil





  • Arrange the first 3 ingredients on two serving plates, and season with salt and pepper. Top with a squeeze of lemon and a drizzle of olive oil.
