Watermelon Arugula Salad

Sweet, bold and refreshing!

Yield: 2-3 Servings

Instructions

Gently toss together the arugula, watermelon, mint and cheese and place on a serving platter or in a shallow bowl.  Season with salt and pepper and drizzle with olive oil and balsamic vinegar. Serve salad immediately.

Ingredients

  • 1 (5 oz.) package Olivia’s Organics Baby Arugula
  • 2 cups cubed watermelon
  • 2 tablespoons fresh mint – rough chopped or torn
  • 1 cup Boursin cheese (or Feta) – crumbled
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Aged balsamic vinegar
