Take a break from the usual mashed potato side with Chef Linda’s easy to prepare, nutrient dense, delicious sweet mash!
Peel and cut the sweet potatoes. Cook in a pot of boiling water (salted if desired) for 20 minutes or until tender.
While the potatoes are cooking, sauté the kale. Add the olive oil to a large sauté pan and heat. Add the kale and cook for several minutes or to desired tenderness. Season with salt and pepper.
Once the sweet potatoes are tender, drain well and return to pan. Add butter and mash well. Stir in the sautéed kale and stir together. Season with salt and pepper to taste.
