Supreme Spinach Salad

Pak Choi and Tatsoi (Chinese cabbages) mixed with baby spinach deliver supreme deliciousness!

Instructions

In a salad bowl, toss together the salad ingredients.

In a separate bowl, whisk together the vinaigrette ingredients and drizzle on salad. Season with salt and pepper as desired. Serve immediately.

  • 1 (4.5 oz.) package Olivia’s Organics Supreme Baby Spinach Blend
  • 1 ripe mango – diced
  • 1 cup grape tomatoes – halved
  • 1 cup almonds – chopped
  • 1/2 cup blueberries
  • 1/2 lemon – juiced
  • 1 tablespoon Dijon mustard
  • 1 garlic clove – minced or grated
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
