A perfect dish for summer nights!
Bring the steak to room temperature and season both sides generously with salt and set aside.
Meanwhile, toss the greens together with the fruit and onions and divide among two plates. In a small bowl, whisk together the dressing ingredients until creamy and thickened. Drizzle some dressing over the salads.
Heat a medium skillet over high heat and add just enough oil to thinly coat the bottom of the pan. When oil is hot and shimmering, add the steak. Cook, undisturbed, over high heat for 3-5 minutes for rare to medium rare, or 5-7 minutes for medium rare to medium, and 7-8 minutes for well done, depending on thickness. Flip the steak according to preference (making sure the first side is nice and brown) and continue to cook on the other side for a minute or two less than you cooked it on the first side. Remove from heat and let it rest for 5 minutes. Slice the steak and serve atop the salads, drizzling more dressing over the steak.
