Quick, easy, and cozy dinner ... especially for the holidays!
Preheat oven to 350 F.
Tear or cut baguette into 1” pieces and reserve in a large bowl.
In a medium skillet over medium heat, melt the butter and add the spinach, a handful at a time, stirring gently. It will wilt quickly and as it does, add more spinach until the entire package is just cooked down but still a vibrant green. Add the cooked spinach and any melted butter from the pan to the bread.
In a separate medium sized bowl, whisk together the eggs, milk, salt and nutmeg until thoroughly combined. Pour egg mixture over the bread and spinach and toss to combine. Let the mixture rest for a few minutes and then toss again, repeating resting/tossing as many times as necessary until the bread has absorbed all the liquid.
Grease a baking dish with a little butter and pour in the bread/egg mixture. Top with shredded cheese and bake until golden and melted on top, about 35 minutes.
