Elevate that morning toast with sweet tomatoes and earthy kale!
Yield: 2 Servings
Preheat oven to 400° F.
Add tomatoes to a sheet pan. If using large tomatoes, cut in half or slice. Drizzle with extra virgin olive oil and season with salt and pepper. Roast for 30 minutes. Set aside and let cool.
Toast bread. Top each slice with ricotta, kale, and roasted tomatoes. Season with salt and pepper and drizzle with olive oil if desired.
