Enjoy roasted butternut squash as a simple side, or add to salads, soups, quinoa, rice, or pasta!
Yield: 4-6 Servings
Preheat oven to 400°F.
Place butternut squash halves on a baking sheet and drizzle with oil. Season with salt, pepper, and rosemary.
Roast 40 to 50 minutes. Squash should be lightly browned and soft enough for a knife to easily go through it.
