Veggie & Pork Skewers

With just a little prep and a grill pan, skewers are a delicious way to enjoy a complete meal!

Yield: 2 Servings


*If using wooden skewers, soak for at least a half hour prior to grilling.

Toss the pork cubes with 2 tablespoons of olive oil, Italian seasoning, and garlic. Set aside to marinate for 30 minutes.

In a separate bowl, toss the zucchini, peppers and tomatoes with 1 tablespoon of olive oil and season with salt and pepper.

Once marinated, thread the pork and veggies onto skewers, alternating ingredients. Place skewers on a hot grill and cook for approximately 5 to 6 minutes until pork is cooked, turning after 3 minutes. You can also prepare this using an indoor grill pan. Any leftover ingredients can be thrown on the grill with the skewers!

Serve skewers on top of Spring Mix tossed with extra virgin olive oil, salt, and pepper.

Tips & Tricks: Simply thread skewers with any of your favorites! Mix it up with shrimp, chicken, beef, summer squash, red onions, mushrooms. The combinations are endless! Double the ingredients for more servings.
