Pasta Primavera

Classic veggie and pasta dish. Done simple and delicious!

Yield: 6 Servings


Bring a large pot of water to a boil, season with a good amount of salt, and cook pasta according to package directions. Drain and set aside, reserving some pasta water.

While pasta is cooking, heat olive oil in an extra large sauté pan. Add onion, pepper and broccoli and sauté for approximately 5 minutes. Add in garlic, tomatoes and zucchini and cook for several more minutes, or until desired tenderness. Add in spinach and season with salt, pepper, and Italian seasoning.

Add the cooked pasta to the vegetables. Stir in the grated cheese and add reserved pasta water, a little at a time, to add desired amount of moisture and create a little sauce.

Serve topped with fresh basil and additional Parmesan.
