These fritters are prepared easily with the use of a food processor.
In a food processor or blender, add the greens, cumin, onion powder, garlic powder, salt, pepper, and Sriracha. Process until broken up into small pieces. Do not blend completely as you want some texture. Add to a bowl and combine with egg yolks, flour, and baking powder.
Beat egg whites with a mixer (or by hand) until they are fluffy with peaks. Fold into the kale and spinach mixture.
Heat a sauté pan with about an inch of oil. When oil is hot, drop the batter by ¼ cup full and cook each fritter for approximately 3 minutes, flip and cook another 3 minutes. Make the fritters as small or as large as desired.
Serve with sour cream on the side.
