Delicious mini meat loafs are protein-packed, portable, and easy portion control.
Preheat oven to 350 degrees F.
In a large bowl, mix together the meatloaf ingredients. Lightly grease a 12 cup muffin tin and fill each evenly with meatloaf mix. Bake for 30 minutes.
In a bowl, add the arugula, cucumber and feta cheese. Whisk together the oil, lemon juice, oregano, salt, and pepper, and toss with the salad.
Serve the mini loaves on top of the arugula salad.
